Fruit salad with yogurt, muesli, and sunflower seeds


Another fabulous recipe that works for your 4 Day Diet and it’s an absolute treat. My family don’t like it, as my kids say, they LOVE it. Posted before without the seeds and different fruit here. Original inspiration and the basics of this recipe  from Nigella Express. Here’s how I made it this time.

Ingredients

  • chopped strawberries
  • orange-mango juice
  • mango
  • raspberries and/or blackberries
  • vanilla yogurt
  • muesli mix (I used fat free blueberry muesli from Trader Joe’s)
  • sunflower seeds (also from Trader Joe’s)

How to make: First make a strawberry layer with finely cut strawberries, 1-2 strawberries per serving cup but you can make the strawberry layer “taller” if you like. Add 1 tablespoon orange-mango juice (or just orange, it’s fine). Add a layer of mango, cut in small pieces.  Add a layer of  raspberries or blackberries. I made 6 bowls and had raspberries in half and blackberries in the other half.  Add 2-3 tablespoons low fat vanilla yogurt. If you do the diet,  you may want to use low fat plain yogurt but the caloric difference is not big. Top with muesli and seeds.
