This is a treat. Serve with caution and treat it as a treat. Rich in calories. My kids loved it, of course. Your guests will, too, have no doubt. Especially easy to put together, even at last minute to please unexpected guests. Not that this variety exists anymore. For better or worse. I got the idea from Jacques Pepin ‘fast food my way’.

Ingredients
- 2-3 tablespoons olive oil
- 16 thin slices from a French baguette
- 16 slices mozzarella cheese, approx. the size of the bread slices
- 16 garlic flakes
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
How to make: Coat a shallow baking dish with olive oil, generously. Press each slice on the pan and then turn upside down and press again so each side is coated with olive oil. Using a cheese grater, ‘grate’ a clove of garlic and put one flake in the middle of each slice. Cover with mozzarella cheese and add a little salt and freshly ground pepper. Drizzle some more olive oil on top and bake at a pre-heated very hot oven (425F/ 220C) for about 10 minutes or until the cheese is melted and lightly browned. You know it’s gonna taste good. 🙂
Notes and tips: Jacques serves with oil-cured, pitted, black olives on top.
