Gluten-free oatmeal cookies

Oatmeal Cookies with Chocolate

I got this recipe from the back of Trader Joe’s Rolled Oats package and it’s a keeper!


  • 1/4 cup butter
  • 1 1/4 teaspoon baking soda
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 3 cups rolled oats
  • 6 oz chocolate chips
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter

How to make: In a large bowl, beat the (softened) butter with the sugars. Add the eggs, vanilla, and baking soda. Mix. Add the peanut butter. Mix. Add the oats and chocolate chips. Mix. Place a teaspoon of dough on a cookie sheet lined with parchment paper. Be sure to separate each teaspoon of dough by at least two inches as the cookies will expand substantially in the oven. Bake for 10-12 minutes or until the edges become lightly brown. Enjoy!
