Healthy vegetable soup

This vegetable soup is simple, healthy, tasty, and low calorie.  #mindfuleating #mindful_eating

Ingredients

  • one onion, chopped
  • 3 stalks of celery, chopped
  • 3 big carrots, chopped
  • 3 big potatoes, peeled and cubed
  • 1 liter of vegetable stock or water
  • 2 tablespoons of chia seeds
  • salt, pepper, thyme, and red pepper flakes
  • 2-3 tablespoons of olive oil

Put together: In a big pot, put together all the ingredients, bring to a boil, and simmer for an hour.
