I got this recipe from Akis Petretzikis while looking for an excuse to take a break from preparing a talk (aka procrastinating). It looked easy and promising to be yummy and it, surely, lived up to expectation. It’s a keeper. I hope you enjoy it. It literally takes less than 10 minutes to prepare.
Ingredients
- 3 cups Greek yogurt
- 1 can (400 gr) of sweetened, condensed milk
- zest of one lime
- juice of one lime
- about 10 fresh mint leaves
- 3 tablespoons of sugar
- 250 gr Graham crackers or other biscuits
How to make: In a big bowl combine the yogurt with the condensed milk. Add the zest from half a lime. Add the juice gradually to your taste. Mix well and put it in the fridge. In a food processor, process the mint leaves with the sugar and the zest from the other half of the lime. When ready to serve, choose a nice glass and crack some Graham crackers at the bottom. Add the yogurt mixture and top with the mint sauce.
It’s still very yummy even if you don’t have the mint leaves to accompany it!
