Cannellini bean salad

This is one of my favorite salads because they make a perfect lunch. You can use canned cannellini beans if you don’t have time to boil the beans but if you do have time, go for boiling your own from scratch. It makes a difference. The night before, soak them in water and boil them until tender. Then, all you need to do is to put the remaining ingredients together and you have a lovely dish. If you are trying to lose weight, be mindful of the fact that beans are a healthy but not low-calorie choice.

Ingredients

  • 1 packet of cannellini beans, boiled
  • salt and pepper
  • 2-3 stalks of celery sliced
  • 1 red or green pepper
  • 2-3 spring onions, sliced
  • Dill, chopped
  • Olives, pitted
  • Olive oil
  • Lemon juice

Put together: Put all the dry ingredients together in a big bowl, add olive oil and lemon juice to taste and toss.
