Lots of potatoes in my kitchen today looking ready to start growing! Time for potato salad. When I was thinking of a title for today’s post, I came up with “Greek potato salad”, meaning the kind with no mayo, just olive oil and vinegar. But surfing the web I saw that other people call Greek-style potato salad anything with feta cheese and olives . So, I’m staying away from giving this recipe any national identity. Quick and easy, as always, and guaranteed taste because you can bring it exactly to your liking. I won’t give measurements. Just taste it as you go along.
Ingredients
Recipe
- 6-8 potatoes
- salt, pepper
- olive oil
- vinegar
- spring onions
- parsley
How to make: Peel the potatoes and boil them until soft to the fork. While still hot and steaming, cut them and place them in a bowl. Add salt now that they are hot. Sprinkle vinegar to your taste. Add olive oil. Top with thinly sliced spring onions and chopped parsley.
