When I started mydinnertoday almost three years ago (wow!), I thought I was creating an electronic recipe notebook to keep the family recipes handy. Who would have known back then that it would end up being used as a training manual for emerging cooks in our family. My husband has become an expert of mydinnertoday’s signature meatballs. Now that are kids are older and quite independent, we ask our nannies to prepare meals from mydinnertoday and so far they have been amazingly successful, even the younger and less experienced ones. Yesterday our beautiful Melina added a new recipe to her repertoire of “Melinakia: The funnest snack or appetizer” and her famous “Leche Asada”. Here is banana bread made exclusively by Melina. Ingredients
- 5 tablespoons butter (room temperature)
- 2/3 cup sugar
- 2 cups self-rising flour (or all-purpose flour combined with 2 teaspoons baking powder, 1/4 teaspoon soda, and 1/2 teaspoon salt)
- 3 big ripe bananas, mashed with a fork
- 2 teaspoons vanilla extract
How to make: Beat the butter with the sugar for a few minutes. Switch to the lowest speed and fold in the flour, banana, and vanilla extra. Do not beat, just stir until all the ingredients are mixed. Brush the bottom and sides of a loaf pan with butter. Pour in the banana mix and bake in 375 F /190 C oven for about 45 minutes or until a toothpick comes out clean. Let it cool before taking it out of the pan.
