Kristia Mavroidi describes this recipe in her book “183 Fresh Ideas” as the easiest and yummiest chocolate cake and she is right. It literally takes minutes to put together using simple ingredients that you probably have in your cabinets right now. It comes out rich and delightful. For a special occasion, you can add a layer of chocolate glaze to bring out the shine!

Ingredients
- 2 cups flour
- 1 1/2 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 sticks or 250 grams butter
- 1 cup water
- 4 tablespoons cocoa
- 3/4 cup Greek yogurt, or plain yogurt, or sour cream
- 2 eggs
How to make: In a big bowl, mix the flour with the sugar, baking soda and cinnamon. In a saucepan, you put together the butter, water, and cocoa. You heat until it reaches boiling temperature and all the ingredients are well integrated. Add the hot cocoa mix to the flour mix and combine with a wooden spoon. Add the yogurt and eggs, lightly beaten. When all the ingredients are smoothly integrated, pour the batter in a rectangular, buttered pan and bake at pre-heated 375F/190C oven for about 15-20 minutes. DO NOT OVERBAKE. Let it cool down and serve. You can dust the cake with confectioner’s sugar or add chocolate glaze.
