It started Saturday morning when we realized that our little one brought home some kind of stomach virus. My son started feeling weird on Sat, today my daughter woke up yikes and hubby is not feeling great either. With three upset stomachs what’s to cook for dinner? I kept them on water drop diet all day long but they need to eat something. And then I remembered that the mother of a friend of ours brought us recently `trachana‘ from Greece. The white variety. Perfect! Trachanas makes a very mild, smooth and tasty soup. It’s made of crushed dried wheat and milk and it comes in different varieties, some of them more strongly flavored. If you happen to have some at home, it’s a very quick and easy soup to make. If you have to make the trachana before you make the soup, it’s too much work…

Ingredients
- 1 cup trachanas
- 8 cups water
- 2 tablespoons butter
- salt, pepper to taste
How to make: Put all ingredients in a pot, bring to boil, boil for about 15-20 minutes until the soup acquires a nice and creamy texture. Be sure to stir the soup frequently while it’s cooking. Ready to serve!
Here’s my take on how to make “sweet” trachoma. Depending on how many people you are cooking for, put some drumsticks in the pot and put on the boil. I usually add some Magi chicken stock as well. Cook at high heat for 20 minutes. And then add the trachana. While its cooking, chop up half a halloumi cheese in small cubes. When the trachana has been cooking for 15 minutes, add the halloumi cheese and cook for an additional 5 minutes. Makes sure that you have been stirring often, as it sticks easily to the pan and will burn. Enjoy.
