“Dakos”, the Greek bruschetta


OK, I’m on a business trip and too busy. But, truth be told, my motivation for every day cooking is going down steeply when it’s not for my family. On the positive side, this is such a good opportunity to share foods that do not require any cooking. I made “dakos”  today,  the traditional Cretan “paximadi” with tomato and feta cheese.  Like bruschetta, only better.

Recipe

Ingredients

  • Cretan “paximadi”
  • diced tomato
  • Feta cheese crumbles
  • olive oil
  • oregano or chopped parsley

How to make: Sprinkle the “dakos” with a few drops of water. No more than 5 drops per  “dakos”.  Arrange on top: a tablespoon or more diced tomatoes and Feta cheese crumbles. Drizzle some excellent quality olive oil. Top with oregano or chopped parsley. Perfect!
