Because of the snowstorm last week, schools were closed the Valentine Day party at my daughter’s school was rescheduled for today. What a better way to set my daughter in the right mood than a strawberry smoothie? You should have seen her face when she saw it waiting for her on the breakfast (!) table. Priceless. Good timing, too. When I came back from my trip I found a big container with strawberries in the fridge with not so much life left in them.
Recipe
Ingredients (generous for 5 people)
- 12 large strawberries
- 1 cup yogurt –I used thick Greek style yogurt
- 1 cup of vanilla ice cream — I used Trader Joe’s French vanilla
- 1 cup whole milk –I used half cup low fat and half cup heavy cream
- 4 tablespoons sugar — the strawberries were not very sweet
- vanilla extract
How to make: Blend the strawberries with the milk, sugar and vanilla extract until smooth. Add the ice-cream and yogurt. Blend a bit more and serve!

Hi Marilyn 🙂 Glad you tried it. It’s always been a hit with my kids. Thanks for the tip about the pineapples. I don’t usually have fresh pineapples at home but I can get canned. I’m sure they’d work. How much pineapple did you add? Couple of whole rings?
