Broccoli and red beans salad


Something really healthy today. Steamed broccoli with red beans and a strong vinaigrette  to spice it up.  I served with eggs and leftover pie (with spinach and other greens) we brought from the mum of  a friend over the weekend.

Recipe

Ingredients

  • broccoli  (for about 4 people)
  • 1 can of red beans, washed and drained
  • for the dressing :
    • 6-8 tablespoons olive oil
    • 1 tablespoon  lemon juice
    • 1 tablespoon vinegar
    • 1 teaspoon Dijon mustard
    • 1 cube garlic pulp thawed (or 1 small garlic clove minced)
    • salt and pepper

How to make: Steam the broccoli until tender but still bright green. Mix them with the washed and drained read beans. Beat the dressing ingredients and pour on top.

Notes and tips: I served the salad with fried eggs and the leftover pie. The quick and healthy way for sunny side up style eggs, is to put just a little oil in the pan, crack the eggs, add salt and pepper and flip over when the bottom is cooked. That way, the yolk remains runny but you don’t need to “bathe” it in oil to get it cooked.  On the down side the yellow part doesn’t look as impressive as with the regular method of cooking sunny side up.
