“Tigania”, or pork saute


Still waiting for the ashes to settle before I can hop on a plane to head back home. I’ve missed my family so much!  I hope I’ll be back home soon. I went to the super market today and I prepared one of the few dishes you can put together even if you’re not in your kitchen. Good quality pork cut in pieces and sauteed with butter, salt, pepper, oregano and lemon juice.

Ingredients

  • 2 pounds pork meat cut in medium size pieces
  • 1 tablespoon butter
  • salt, pepper, oregano
  • lemon juice

How to make: Put the butter in a deep pan and saute the pork pieces. Be sure to not “crowd” the pan with the pieces. Crowded meat pieces start boiling. Stir the meat so it’s browned on all sides. Saute for about 15-20  minutes or until the meat is tender. Take off the heat. While still in the pan, add salt, pepper, lots of oregano and lemon juice. Serve immediately.
