The five minute biscuit dessert


Yesterday, Friday, my kids were expecting dessert and I was just too busy. Am I glad I talked to my friend M. (a mum, too), who shared  this five minute dessert. And were my kids glad I did!  🙂  Very yummy.

Recipe
Ingredients

  • 200 grams s butter (2 sticks) –room temperature or softened in the microwave for a few seconds
  • 1 cup sugar
  • 6 tablespoons cocoa
  • 6 tablespoons evaporated milk
  • 2 teaspoons orange extract
  • about 300-350 grams biscuits (I used 1 1/2 box shortbread girl scout cookies)

How to make: Beat all the ingredients except the cookies until smooth. The mix is fairly soft. Break the cookies in pieces and fold them in with a spoon.   Arrange the cookie mix on aluminum foil and roll over to form a cylinder. Put in the fridge for couple of hours. Take off the foil and serve!

Notes and tips: The recipe that M. gave me had two eggs and 3 tablespoons milk.  I wanted to avoid the raw eggs so I substituted the eggs with the milk and the result was just fine. I used orange extract because I just love orange with chocolate. You can use vanilla extract instead  or cognac. Finally, how many biscuits you need depends on the size of the biscuits. But don’t sweat it. You can fold the biscuit bits gradually until you get the ratio you like.
