Roast chicken with potatoes

Who, raised in a Greek home, hasn’t had this dish?



  • 1 whole chicken
  • salt, pepper, oregano, juice from 1-2 lemons
  • 2 pounds/1 kilo  potatoes
  • 1/2 cup olive oil
  • 1 onion chopped

How to make: Wash the chicken thoroughly. Rub the inside and the outside of the chicken with salt, pepper and oregano.  Sprinkle some lemon juice  in the inside for extra flavor. Place in a pan, breast side up.  Add the chopped onion at the bottom of the pan. Peel the potatoes and cut in desired shape.   Arrange them around the chicken. On top of all, sprinkle salt, pepper, oregano, the juice from one lemon or maybe one and a half, and olive oil.  Be sure the olive oil  goes on the chicken. Add a cup of water and cook in 390F/200C over for about an hour and a half.
