Christmas pancakes

On my daughter’s birthday the day started festive, with pancakes especially shaped for the holidays. A Christmas tree, a snowman, a star, and a gingerbread man. I got the holiday pancake molds at Bed, Bath & Beyond. For the pancakes dough,  I used Trader Joe’s Multigrain Pancake mix, which is the healthiest and richest in fiber. There’s mixing instructions on the box. You mix with oil, eggs, and milk. Then, serve with  awesome maple syrup and raspberries.

Just beautiful.

Using the molds was not trivial. I had to improvise. Instead of following the package instructions to remove the mold before flipping the pancake, I flipped the pancake with the mold to cook the other side and only when the pancake was done, did I remove it from the  mold. If you want to make your own mix,  follow the pancakes with butter recipe.

Enjoy a festive morning with your family. It takes very little and it gives back a lot back.
