Between Christmas and New Year’s Eve, take a healthy break. Open the freezer door and get started. Beautiful artichokes with peas, potatoes, and carrots.
- 1 cup olive oil
- 1 big onion, chopped
- 5 potatoes, halved or quartered
- 4 carrots, sliced
- 1 bag frozen artichokes (I got them from Trader Joe’s)
- 1 tablespoon flour, dissolved in a cup of water
- juice from one big lemon
- salt, pepper
- dill, chopped
- 2 cups frozen peas
How to make: In a big, deep pan put all the ingredients above except for the frozen peas. Cover the veggies with water (just barely cover as in the photo below). Cover the pan and cook at low heat for about an hour. Ten minutes before the hour, add the peas. Correct salt, pepper, lemon if needed. Done.
