When I want to prepare a tomato salad as a quick meal or for my guests, I always break couple of “dakos” and mix them in. The “dakos” make the salad more filling for a quick meal. When you want to prepare the salad for guests, the beauty of “dakos” is that it allows you to prepare it at least an hour or more ahead of time. The liquid from the tomato is absorbed by the “dakos” that need it to soften and the salad stays nice and dry.
Cut tomatoes, the best quality you can get, add salt, and mix with a beautiful sampler of olives (I love green olives stuffed with blue cheese), freshly chopped parsley, capers if you have any, and feta cheese. Best quality olive oil on top and let your thoughts travel you where the sea is blue and the sun is bright.
