What a recipe! I knew I could trust Simply Recipes to find a kids-friendly, super yummy recipe to cook my cod fillets and I wasn’t disappointed. Here’s where I found the recipe . It takes a little preparation to make but not too much and it’s all worth it. My kids loved it! The fish cakes taste great even when they are cold and the leftovers are, surely, going to the lunchbox tomorrow morning.

Ingredients
- 3 cod fillets (fresh or frozen)
- 3 potatoes
- 1 cup breadcrumbs
- a small bunch of parsley, chopped
- 2 tablespoons grated Parmesan
- 2 eggs, lightly beaten
- 2 cloves of garlic minced or one cube of frozen garlic pulp
- salt, pepper
- canola oil
How to make: Wash the fillets and boil them until they flake. Peel the potatoes, cut them in 4-6 pieces, boil them and mash them. In a big bowl, combine the fish in flakes, the mashed potatoes, chopped parsley, bread crumbs, eggs, salt, and pepper. You can use your hands to mix them. Use your hand to shape them into patties (see photo). Cover the bottom of a pan with canola oil (not too much). Heat the oil and add the fish cakes. Cook them until brown and then flip them over to cook the other side. Ready to serve!
Notes and tips: If the mix is too runny, add more bread crumbs.
