You come back home at 6:30. The kids are hungry and all you have is three chicken breasts that you took out of the freezer this morning. The kids are hungry. What do you do? Chicken “tigania”. of course. “Tigania” is a Greek word that means food that has been cooked in a frying pan. Pork meat “tigania” is the most traditional version of this dish but chicken is just as good.

Ingredients
- 2-3 breasts of chicken
- 2-3 tablespoons butter (or oil)
- salt, pepper, oregano, lemon juice
How to make: Wash the breasts and cut them in cubes. Heat the butter and saute the chicken bits until they are nicely browned. A minute or two before they are ready, add salt, pepper, and oregano. Squeeze the juice of one lemon on top and swirl the pan. Take it off the fire and serve on a plate lined with parchment paper if you have some.
