This is an old and tried recipe in our family but one we haven’t made for a while. One of the many favorite recipes I have collected from Kitchen Secrets. If you follow the link and scroll down you will see my review on Amazon. You will need two cans of minced clams with their juice and you are on your way. It takes literally 10-15 minutes to prepare, including cooking.
Ingredients
- your favorite pasta (1 pound)
- 1/4 cup olive oil
- 1 onion
- 3 cloves garlic
- 1/3 cup white wine
- 1/8 teaspoon crushed red pepper flakes
- 2 cans minced clams
- parsley
How to make: Cook the pasta according to packet instructions. While the pasta is boiling, heat the olive oil in a saucepan. Saute the onion for about four minutes. Add the garlic and saute for one more minute. Add the wine and crushed red pepper flakes. Cook for another 3 minutes. Add the clams with their juice and cook for another 2-3 minutes, until the clams are heated. When you are ready to serve, add chopped parsley to the sauce and combine with the pasta.
Notes and tips: The best pasta for this recipe is linguini or fettucini or other pasta with good surface to absorb the sauce. I only had “pastichio” pasta in my cabinet so I went with that.
To speed up the cooking, fill the pot with hot water. We have a samovar and I often use it for heating water for cooking but hot tap water is also fine.
