With -15C outside, record low temperature, what comes to mind? Sausages with peppers! I got the idea from my brother who was describing the other day a recipe with sausages and peppers cooked by Vasilis Kallidis. Here’s my version. Yummy, yum, and put together in a matter of minutes. The nice thing about the dish is that you can make it as mild or as hot as you like. If the sausages are mild and you want a hotter dish just add some crushed pepper flakes.

Ingredients
- 4 medium sausages of your choice
- 2 tablespoons olive oil
- 1 green and 1 red pepper (seeded and sliced)
- cream of balsamic vinegar (or plain balsamic vinegar)
- couple red crushed pepper flakes (optional)
How to make: Cut the sausages in pieces. Heat the oil and cook the sausages until lightly browned. Add the peppers sliced (after you wash them and remove the seeds). Continue cooking until the sausages are nicely browned and the peppers softened. Serve with a drizzle of balsamic vinegar.
