This soup came about a couple of days ago when I decided to cook a Chicken noodle soup only to find out that I had no chicken. It’s the same soup only except the chicken that was replaced with chicken stock. I used angel hair for noodles but any small pasta would be fine. Not using chicken reduces the preparation time of this soup to ten minutes!

Ingredients
- 2 tablespoon butter
- 1 large onion, chopped
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 8-10 cups chicken stock
- 2 angel hair nests (or 2 cups of any small pasta)
- salt and pepper to taste
How to make: In a big pot, heat the butter and saute the veggies. First the onions for about 5 minutes. Then add the carrots , celery, garlic, and thyme. Cook for another 5-7 minutes. Add 8-10 cups of chicken stock and season with salt and pepper to taste. Bring to boil, add the angel hair and cook for another 10 minutes.
