With a vegetarian in the the house, I’m looking into protein and iron rich foods. You probably already knew about beets that they are loaded with vitamins but did you know that they contain the finest quality iron, especially the green parts, that helps regenerate red blood cells, they are great detoxifiers, they help normalize blood pressure, and they are your best helpers fighting constipation and arteriosclerosis? Beets are all natural medicine in disguise. For this salad, I got them in a can and mixed them with chopped green onions, olive oil and red wine vinegar. Next time, I’ll be sure to get them fresh so I can cook the green parts, too.
