Fiber plus broccoli soup

You’ve seen this recipe before. Let this post count as a reminder of the many benefits of broccoli and how delightful this soup is. For extra fiber, protein, and Omega-3, I added two tablespoons of ground flax seed. Go get broccoli! Frozen bags of broccoli will work, too. No excuses.

Ingredients

  • 1 onion, chopped
  • 2 tablespoons oil or butter
  • broccoli florets from a large head (or a bag of frozen broccoli)
  • chicken broth (about 2-3 cups, enough to just about cover the broccoli)
  • salt, pepper
  • 1 cup heavy cream (or evaporated milk, or milk)

How to make: Saute the onion. Add broccoli. Add chicken broth. Boil for 20 minutes. Add salt & pepper. Puree with a  hand held blender . When you are ready to serve, add some heavy cream or milk. Give it a good stir and serve with nice multi-grain toasted bread.
