I found this recipe at the back of a smokey salmon package from Trader Joe’s and it was an instant keeper, mydinnertoday material! It takes 20 minutes to make and all you need to have is stuff in your freezer -frozen salmon and frozen spinach-  and heavy cream. You will always find these basic 3 ingredients in my fridge so this is a recipe I can cook anytime I have 20 minutes without any planning. It tastes amazing and my whole family loves it. The ingredients below is for the double version with 2 bags of spinach and 4 pieces of salmon.

Ingredients

  • 2 bags frozen spinach (16 ounces  or 1 liter each)
  • 4 cups heavy cream or half-half
  • 4 tablespoons soy sauce
  • 4 tablespoons mustard
  • 1 teaspoon nutmeg
  • salt and pepper to taste
  • 4  small salmon fillets with or without the skin
  • 1 lemon

How to make: Combine all the ingredients except the salmon and lemon in a big skillet. Once well combined, place the salmon fillets on top, skin down. Cover and cook at low temperature for about 20-25 minutes. Midway spoon some spinach and cream over the salmon.  Ready. When you serve, squeeze some lemon drops on top.
