I owe the discovery of this recipe to a vegan friend whom we invited over for dinner. A wonderful and very simple recipe with a smooth and pleasing texture. You don’t need to be a vegan to enjoy it. I found it on allrecipes and made it without any modification except, doubling it!
Ingredients
- 3 tablespoons corn flour
- 2 tablespoons water
- 1 1/2 cups soy milk
- 1/4 teaspoon vanilla extract
- 1/4 cup sugar
- 1/4 cup cocoa
How to make: Dissolve the corn flour in the water. Do not omit this step or the flour will form lumps in the chocolate mixture. In a saucepan, combine the soy milk, vanilla, sugar, cocoa and dissolved cornstarch. Cook until the mixture thickens. Stir all the time. Put it in your serving container(s), let it cool down and then put in the fridge.
