
Cod stew with fresh tomatoes
This recipe is a modification of the Fish Stew by Simply Recipes.
Ingredients
- 1/4 cup olive oil
- 1 chopped onion
- 2 minced cloves of garlic or 2 frozen cubes
- chopped parsley
- 2 tomatoes
- 1 teaspoon tomato paste
- 2 teaspoons tomato paste (optional)
- 8 oz clam juice
- 1/2 cup white wine
- 4 big cod fillets
- salt and pepper
- oregano and thyme
- 4-6 red pepper flakes
How to make: Heat the oil. Saute the onions for five minutes. Add the garlic and parsley and cook for 2-3 minutes more. Add the tomatoes, tomato paste, clam juice, and wine. Cook for 10 minutes. Add the fish, salt, pepper, oregano, thyme, and red pepper flakes. Cook for another 5-7 minutes until the fish is ready. To test readiness, check if it’s easy to get a flake of the fish with a fork.
