This recipe by Gordon Ramsay was made and posted by my son Thanos who is establishing himself as a great cook! Enjoy.
Ingredients
Empanadas:
- Two packets of puff pastry
- Olive oil
- 1 Onion
- 2 Garlic cloves
- Ground cumin
- Ground cinnamon
- 1/2 tsp paprika
- 300g ground beef
- 4 tablespoons chopped green olives
- 1 tsp oregano
- 1/2 tsp chili flakes
- pinch of sugar
- 2 hardboiled eggs
- 1 beaten egg
- salt and pepper
Chimichurri Sauce
- A bunch of parsley
- 3 Garlic Cloves
- 1 tsp dried oregano or 1 tbs fresh oregano leaves
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 4 tbsp olive oil
Directions:
First, roll out the puff pastry and cut them into small discs. Cover them with cling film and then put them in the fridge for a little while to cool. To prepare the beef, heat olive oil in a pan over medium heat, and add chopped onion and garlic until soft, then add the cumin, cinnamon, and paprika. Stir. When it starts to smell nice, add beef, salt and pepper and cook until the beef turns light brown. Then put the olives, oregano, chili flakes, a pinch of sugar, and eggs into the beef and stir. Leave it to cool down. When the beef cools down, put a tablespoon of it in the middle of the disc of puff pastry and brush egg around the beef. Then fold it and pinch down on the edges so that there are no holes in the pastry. Do this for all the discs and then put it in the fridge for another 20 minutes. While that is happening, preheat the oven to 180 degrees Celsius. When the time has passed put the empanadas in the oven and cook for about 20 minutes, or until the pastry is golden brown. Prepare the chimichurri sauce in the meantime. In a small blender, put parsley, oregano, and garlic and chop. Then add the rest of the liquid ingredients and blend for a little bit more. When the empanadas are cooked, serve with the chimichurri and eat!
