Starting our mindful eating with a rich breakfast choice. Whole grain bread with avocado or guacamole and poached eggs.

Ingredients

  • Whole-grain bread
  • Avocado or guacamole
  • Eggs

How to make:  To make the poached eggs, fill a pan with water, add a little vinegar and salt. When bubbles start forming at the bottom of the pan, reduce the heat and carefully break the eggs in the water. Cook for 4 minutes. Lift them out out of the water and lay them in a plate covered with kitchen paper to absorb the water.

For the avocado, you only need a ripe avocado. Cut the avocado in half, spoon the avocado out of its skin and add some salt and pepper. You can, also, use store-bought guacamole or make your own adding chopped onions, diced tomatoes, chopped cilantro, and lime juice.

Toast a slice of whole-grain or whole-wheat bread. Spread avocado and top with one or two poached eggs.
