I am falling in love with quick and easy assemblies of 3-4 healthy ingredients. OK, this is more than 3-4 ingredients but missing one or two won’t break it. No credits due! This is my inspiration. I hope you like it.
Ingredients
- Whole wheat bread
- 1 can cannellini beans
- 1 cup feta crumbles
- 2-3 tomatoes cut in cubes
- 1 cucumber diced
- A few pitted olives
- Salt
- Chopped dill
- Olive oil
- Vinegar
How to make: In a bowl, combine the cannellini beans with the tomatoes, cucumber, olives, and dill. Add salt to your taste. Drizzle some olive oil and vinegar and toss lightly.
To assemble: Toast a slice of bread. Put some feta cheese on the bread. Add a big spoonful of the bean mix and enjoy a wonderful bite full of the smells and feels of a Mediterranean breeze.
