Tender chicken cooked in wine and tomatoes


This is the first recipe entered in my recipe book at the soon to be made public, aggregate site  greekfoodblogs. The recipe was posted http://www.sintagesgiaantres.gr/kotopoulo-in-umido and it was perfect. Easy, quick, and yummy. Instead of a whole chicken that was called for in the recipe, I used chicken thighs that I had in the fridge.

Ingredients

  • 6-7 chicken thighs, boneless
  • 3 tablespoons olive oil
  • 1 cup white wine
  • 1 pound tomatoes, skinned and mashed (I used a can with whole tomatoes and diced them)
  • 2 bay leaves
  • salt and pepper to taste

How to make: In a heavy skillet, heat the oil and saute the chicken on all sides. Add the wine and scrap the bottom to dissolve any hard parts in the liquid. Add the tomatoes, salt, pepper and bay leaves. Cover and cook for about 45 minutes. Check occasionally to be sure there’s enough liquid. Ready!
